Winegrower Series Session V: Fermentation Management & Juice Analysis
The cellar is a buzzing hive during “crush,” and we want you to be a part of it! In this session, we’ll assess the progress of fermentations by chemical analysis of your cuvée of Trousseau, along with several others in the cellar. Paul and Steven will share what they consider when monitoring fermentations and how they manage their development, including temperature control, size of the fermenter, and lees management. Together, we’ll explore how winemaking at Analemma is both an art and a science.
Winegrower Series Session IV: Hand-Harvesting, Field-Sorting, and Fruit Processing
Although there’s magic happening in the vineyard year-round, the excitement around harvest is unparalleled! For this special session, we’ll be joined by Analemma’s Estate Foreman, Ramón Ibarra, to hand-pick in the vineyard. As a cohort, we’ll hand-sort, carefully curating the clusters for our Trousseau bottling before heading into the cellar for destemming and pressing. To top it all off, we’ll share a harvest breakfast!
Winegrower Series Session III:Brix and Ripeness Monitoring – Pre-Harvest Sampling Activity
Veraison is happening in the vineyard, and it’s almost time to start sampling!

This will be important information for us to gather so that we can best approximate the levels of ripeness and acidity that we decided on as a cohort in Session II. Following this session, we’ll have a better idea of when our Trousseau harvest date will be!
